Featured Chef: Chef Manuel “Memo” Treviño III
Chef Manuel Trevino is honored to return to the birthplace of his culinary inspiration. From manning a mesquite fired grill cooking carne asadas, to shaving truffles in Le Cirque’s famed NYC kitchen, Chef Manuel “Memo” Treviño III’s life has always been steeped in cuisine. The Laredo born and raised chef’s culinary interest was piqued by the smell of the kitchen at an early age. Through the years at United Day School, to the halls of St Augustine High School, these were the times that passion for food and the rituals that encompass a meal were instilled in Chef Trevino. After graduating with a business degree from St. Mary’s University in San Antonio, TX the lure of the restaurant industry proved too strong and Chef Treviño went on to earn a degree in the Culinary Arts from of The New England Culinary Institute (NECI) in Montpelier, Vermont. Armed with his passion for food and a desire to learn from the best, Chef Trevino traveled to Ensenada, Mexico to work for the Santo Thomas Winery with acclaimed Mexican Chef Benito Molina Dubost. With the hunger to cook in one of the most competitive cities for restaurants in the world, Chef Treviño moved to New York City to prove himself at the legendary French restaurant Le Cirque 2000. Chef Treviño rose the ranks from Garde Manger to Tourant at the New York institution. Chef Trevino then spent the next three years alongside Chef Mario Batali at critically acclaimed Babbo in NYC, where he engrossed himself in every aspect of Italian cuisine as Sous Chef. From Babbo, ChefTreviño went back to his roots in Mexican cuisine as Executive Chef for Dos Caminos of the B.R. Guest Group. During his time at Dos Caminos, Chef Trevino competed on the fourth season of Bravo TV’s Emmy award-winning “Top Chef.” In 2010, Trevino was honored by his alma madder NECI as distinguished alumni. Shortly after following a deep desire to expand his culinary repertoire, the father of two then ventured into a new genre joining the Tao Group as the Executive Chef for two different establishments; buzzy hot spot Lavo restaurant and trendy hotel Dream Downtown. In 2014, Trevino ventured into new and exciting opportunities with ESquared Hospitality as Corporate Executive Chef. Here he has helped to launch their first fast casual brand, byChloe, vegan chain restaurants started in 2015. The chef-driven, plant-based eatery currently has 18 locations across 6 cities in the US, UK and Canada and continues to grow.
